Sugar swaps syrup

Agave Syrup

Agave nectar thinned with warm water so it pours and shakes like simple syrup.

Quick answer

Agave syrup is agave nectar thinned with warm water: 2 parts agave to 1 part water by weight (about 1 cup agave to ⅔ cup water). Stir until smooth and use it ounce-for-ounce in place of simple syrup.

Straight agave nectar is thick and very sweet, so it clings to the jigger and sinks in a cold shaker. Diluted, it pours cleanly and lands at about the same sweetness as 1:1 simple syrup.

It's the natural partner for tequila and mezcal, and a vegan swap for honey syrup in almost anything.

Method

  1. Measure the agave

Weigh the agave straight into a clean jar or bottle. It's less mess than scraping a measuring cup.

    1 cup330 g light (blanco) agave nectar

  2. Add hot water

Pour in the hot water. Warm water blends in seconds; cold water leaves syrupy streaks.

    2⁄3 cup160 ml hot water

  3. Mix

Stir or seal and shake for 30 seconds until completely uniform, with no ribbons at the bottom.

  4. Cool and refrigerate

Let it cool, cap it, label it and refrigerate.

Storage. Keeps about 1 month sealed in the fridge. Undiluted agave lasts far longer in the pantry, so mix only what you'll use. Discard if cloudy, fizzy or sour-smelling.

Tips for the best batch

  • Agave tastes sweeter than sugar because it's mostly fructose. If you're using straight nectar instead of this syrup, use about two-thirds as much as the simple syrup called for.
  • Light (blanco) agave is the neutral choice; amber or dark agave has caramel notes that suit reposado and añejo tequila.
  • Rinse your jigger with warm water between pours if you're using straight nectar; with this syrup you won't need to.
  • Agave's sweetness fades quickly on the palate, which is why it works in drinks where the spirit and citrus should lead.

Variations

1:1 bar dilution

Equal volumes agave and water, the way many busy bars batch it. It's a little less sweet, so use about ¼ oz more per drink.

Spicy agave

Steep 1 sliced jalapeño in the hot water for 10 minutes, strain, then mix with the agave. Use it in spicy margaritas.

Lime-zest agave

Steep the zest of 2 limes in the hot water for 10 minutes before mixing; strain. Brightens margaritas and Palomas.

Questions people ask

Do you need to dilute agave for cocktails?

It helps. Straight agave nectar is thick and very sweet, so it's hard to measure and doesn't mix well when cold. Diluted 2:1 with warm water, it behaves like simple syrup.

What's the ratio for agave syrup?

2 parts agave nectar to 1 part water by weight (about 1 cup agave to ⅔ cup water) matches the sweetness of 1:1 simple syrup. Many bars use 1:1 by volume for a lighter syrup.

Can I substitute agave for simple syrup?

Yes. This diluted agave syrup swaps ounce-for-ounce. If using straight nectar, use about two-thirds the amount of simple syrup called for.

Is agave healthier than sugar?

Not really. It has a lower glycemic index because it's mostly fructose, but it has about the same calories as sugar. Choose it for flavor, not health.

How long does agave syrup last?

About 1 month in the fridge once diluted. Straight agave nectar keeps for a long time in the pantry.
