The syrup
In this recipe
Classic Simple Syrup¾ oz22 ml
Simple syrup is equal parts sugar and water, heated just until the sugar dissolves.
3/4 oz 1:1 simple syrup is about the sugar in 1 tbsp and won't leave grit.
As printed: 1 tbsp sugar muddled with lime (Taste of Home); sweetener to taste (Skinnytaste).
Or use
Mint Simple Syrup¾ oz22 ml
Mint simple syrup is 1:1 sugar syrup flavored with fresh spearmint.
Mint syrup makes more of a difference here than in the rum version, because it adds body and a fuller mint flavor where the rum would have been. Use it instead of simple syrup and still press 5-6 fresh leaves for aroma.
As printed: Plain sugar plus fresh mint.
Where it comes from
The alcohol-free 'virgin mojito', or 'nojito', keeps the Cuban Mojito's mint, lime, sugar and soda water and simply leaves out the rum.
