The syrup

In this recipe

Strawberry Syrup¾ oz22 ml

Strawberry syrup is sliced strawberries simmered briefly in a 1:1 sugar syrup, steeped off the heat, then strained without pressing.

Our strawberry syrup replaces both the simple syrup and the muddled berry ounce for ounce, so no fine-straining is needed.

As printed: 1:1 simple syrup muddled with a fresh strawberry

Where it comes from

The Daiquiri is Cuba's early-20th-century sour of rum, lime and sugar. Strawberry versions became best known as frozen blender drinks, and bartenders such as New York's Matthew Belanger have brought back a shaken, fresh-fruit take.

Source: Strawberry Daiquiri (Punch recipe) by Matthew Belanger.
