Demerara Syrup¾ oz22 ml

Demerara syrup is demerara sugar dissolved in water, usually rich: 2 parts sugar to 1 part water by weight.

Ours is 2:1: 1 oz 1:1 ≈ 2/3 oz 2:1, so use a scant 3/4 oz.

As printed: Angostura: 1 oz Demerara simple syrup (Angostura's own demerara syrup is 1:1)

Or use

Rich Simple Syrup (2:1)¾ oz22 ml

Rich simple syrup is two parts sugar to one part water by weight: 400 g sugar dissolved in 200 ml hot water.

1 oz 1:1 ≈ 2/3 oz 2:1, so use a scant 3/4 oz.

As printed: 1 oz simple syrup (1:1)

Mint Simple Syrup1 oz30 ml

Mint simple syrup is 1:1 sugar syrup flavored with fresh spearmint.

Our 1:1 mint syrup replaces both the simple syrup and the muddled mint. Keep a few leaves in the glass and garnish with a sprig.

Where it comes from

The drink is credited to the bar of the Queen's Park Hotel in Port of Spain, Trinidad, and is usually dated to the 1920s. Trader Vic printed a recipe in 1946 and praised it highly, and Angostura now promotes it as Trinidad and Tobago's national drink.
