The syrup
A variation
Toasted Coconut Syrup1 oz30 ml
Toasted coconut syrup is simple syrup infused with golden toasted coconut flakes.
, not a like-for-like swap: cream of coconut supplies coconut fat and body as well as sugar. Our toasted coconut syrup gives the sweetness and a nuttier, toasted coconut flavor but a thinner, less creamy drink; use 1 oz, and add 1/2 oz unsweetened coconut cream if you want the classic body.
As printed: cream of coconut (e.g. Coco López)
Where it comes from
Daphne Henderson made the Painkiller famous at her Soggy Dollar Bar on Jost Van Dyke in the British Virgin Islands in the 1970s. Pusser's founder Charles Tobias worked out his own matching recipe, built it around Pusser's rum and later trademarked the name.
