The syrup
In this recipe
Ginger Syrup1 oz30 ml
Ginger syrup is sugar dissolved into fresh ginger juice for real heat, or simmered with sliced ginger for mellow warmth.
1 oz of our 1:1 ginger syrup supplies the same sugar as her simple syrup plus the ginger from her ginger beer; add a splash of soda for length
As printed: 1 oz simple syrup (1:1) + 1 oz homemade ginger beer (about 1 lb ginger per gallon of water, lightly sweetened with brown sugar)
Where it comes from
Audrey Saunders created it around 2000 to win over gin-shy drinkers, crossing a Mojito with a Moscow Mule and making her own ginger beer. It became a signature at her Pegu Club, which opened in 2005.
