The syrup

In this recipe

Passion Fruit Syrup½ oz15 ml

Passion fruit syrup is strained passion fruit pulp mixed into rich simple syrup without cooking the fruit.

Use ours 1:1. It is pulp-forward and fairly rich, so add a barspoon more lemon if the drink tastes sweet.

Orgeat (Almond Syrup)¼ oz7 ml

Orgeat is a creamy almond syrup flavored with orange blossom water, best known from the Mai Tai.

Or use

Falernum Syrup (Non-Alcoholic)¼ oz7 ml

Falernum is a Caribbean lime, ginger, clove and almond syrup used in tiki drinks.

Spec means the liqueur (John D. Taylor's Velvet Falernum). Swap our non-alcoholic falernum syrup 1:1 by volume; it is a little sweeter and has no alcohol, so trim by about 1/8 oz if the drink runs sweet.

Where it comes from

California tiki bartender Joseph "Popo" Galsini created this gin tiki drink as the X-15, renamed it the Saturn and won the 1967 California bartenders' guild competition with it before competing at that year's IBA world championship. Jeff Berry revived it in Beachbum Berry's Taboo Table (2005).
