The syrup
In this recipe
Demerara Syrup⅙ oz5 ml
Demerara syrup is demerara sugar dissolved in water, usually rich: 2 parts sugar to 1 part water by weight.
As printed: 1 barspoon demerara syrup, 2:1 (Clover Club via Food Republic); Imbibe: 1/4 oz demerara syrup (1:1)
Or use
Rich Simple Syrup (2:1)⅙ oz5 ml
Rich simple syrup is two parts sugar to one part water by weight: 400 g sugar dissolved in 200 ml hot water.
Same 2:1 strength, without the molasses notes.
As printed: 1 barspoon demerara syrup (2:1)
Or use
Brown Sugar Syrup¼ oz7 ml
Brown sugar syrup is packed brown sugar simmered briefly with an equal volume of water.
Our brown sugar syrup is 1:1, so use 1 1/2 tsp (1/4 oz) to match 1 tsp of 2:1.
As printed: Food Republic: brown sugar cubes as an alternative
Or use
Classic Simple Syrup¼ oz7 ml
Simple syrup is equal parts sugar and water, heated just until the sugar dissolves.
Same strength as Imbibe's 1:1 syrup; you lose the demerara flavor.
As printed: Imbibe: 1/4 oz demerara syrup (1:1)
Where it comes from
Rum versions are as old as the Old Fashioned template itself: The Savoy Cocktail Book (1930) notes the drink can be made with rum instead of rye. Modern bars usually pair an aged rum with demerara syrup to bring out the rum's molasses notes.
