The syrup

In this recipe

Honey Syrup1 oz30 ml

Honey syrup is equal parts honey and warm water stirred together until smooth, with no boiling needed.

no conversion needed for 1:1; if replacing 3/4 oz straight honey, 1 oz of our syrup is a little lighter, so add a splash more to taste

As printed: 1 oz honey syrup (1:1, The Infatuation); Punch: 3/4 oz honey or maple syrup

Where it comes from

Toddies date to the 1700s as a loose family of spirit, sweetener and hot water, and Jerry Thomas's bar guide, first published in 1862, printed several. The honey-and-lemon version is a more recent fixture, partly because of its reputation as a cold remedy.
